The good news: I've lost 8 pounds! The bad news: Finding healthy meals that I can eat and that Craig will actually like has been a bit of a challenge.
But, I found a winner this past weekend while perusing Cooking Light's archives: I give you - Thai Chicken Chowder. Grossest name ever - pretty sure the words "Thai" and "chowder" should only go together...never. But, don't be deceived. It was real good.

Sweet potatoes // cilantro // coconut milk // peppers // ginger // peas and tons of other deliciousness abound in this, but I will make one note... the lemongrass is a delicious addition, but the texture left something to be desired. I may try grating it next time of removing the outside layer first. It was definitely a bit too fibrous for my liking. Otherwise though, this meal was delicious and diet-friendly.
Oh...and that drink. UH-MAY-ZING. Cilantro + Mint + Lemonade + Gin. Cilantro in a cocktail? Pure genius. My husband is truly a mixologist.
Any healthy recipes you'd recommend? I'm open to suggestions (The only stipulation...there has to be meat - or at least the option to add it in - for Craig)!

youre right! THAI + CHOWDER sounds YUCK! but we have similar palates and taste in food so I trust that its good! we need a Zielinski/Hartmann dinner on the books ASAP!

ReplyDeleteIt changed my cooking, forever. I have YET to make a single recipe out of it that Johnny doesn't love, that I don't love, and whoever else is lucky enough to get a bite doesn't love. We especially love the chicken enchiladas (so fast and equally good made with beef) and the Chicken "no pot belly" pie (less than 300 calories for a dinner portion with almost 30 grams of protein!!!! also so good with beef, but make double the recipe for leftovers as this is just a bit more time-consuming because of the veggie chopping). But really, we've loved everything in there, like the lemony yogurt muffins, etc.
Number one top recommended cookbook of all the ones I've tried. :)
Just get it. You won't be disappointed.
